    Here’s what you will need:

    one and a half lb lean ground beef two tablespoons finely chopped onion two tablespoons drained Old El Paso chopped green chiles eight slices pepper Jack cheese, 2×1x1/4 inch (about four oz) four kaiser rolls, split a quarter cup Old El Paso taco sauce or Old El Paso Thick ‘n Chunky salsa

    Prepare as follows:

    1. Heat gas or charcoal grill. In medium bowl, mix beef, onion and chiles. Shape mixture into 8 thin patties. Top each of 4 patties with 2 slices cheese. Place remaining beef patties on top; pinch edges to seal securely. 2. Place patties on grill over medium heat. Cover grill; cook 14 to 16 minutes, turning once, until burgers are slightly firm when pressed in center. Add rolls, cut sides down, for last 4 minutes of grilling or until toasted. Serve patties on rolls with taco sauce.

    Preparation:

    Texas Stuffed Grilled Burgers- Serves 5

    Ingredients you’ll need:

    5 pounds lean ground beef 6 tablespoons Worcestershire sauce 2 teaspoons hickory seasoning (optional) salt and pepper to taste 2 cups chopped onion 2 cups chopped fresh mushrooms 2 cups chopped cooked ham 3 cups shredded Cheddar cheese

    To prepare:

    Preheat your grill for high heat. When hot, oil the grate lightly. In an appropriately sized bowl, mix the ground beef, Worcestershire sauce, hickory seasoning, salt and pepper until everything well blended together. Hand shape between 8 and 10 balls, and then flatten them into patties for grilling. On half of the patties (4-5), distribute the onions, the mushrooms, the chopped ham and the cheddar cheese. Cover the piles with the remaining patties, making certain to enclose the filling and to tightly seal the patties together. Grill the 4-5 patties for somewhere between 8 and 10 minutes on each side, or until the cheese in the middle has melted and the burger is well done.

    Marinated Hamburgers

    The ingredients you’ll need:

    3 T. Lemon Juice 1 1/2 tsp. seasoned salt 1 T. Worcestershire sauce 1 T. soy sauce 1 T. A-1 sauce 1 T. oil 1/2 C. beef broth 1 tsp. Heinz 57 sauce 1/4 tsp. garlic salt 1 tsp. vinegar

    To prepare:

    Combine the ingredients.

    Use a pound and a half of ground beef to make patties.

    Put the burgers in a covered container and pour the marinade over them. Cover and refrigerate overnight.

    Remove from marinade and sear over high heat to seal in the juices.

    Mushroom Stuffed Burgers- serves 6

    Required ingredients are:

    1 1/2 pounds hamburger 1/4 cup finely diced onion 2 eggs, lightly beaten 3/4 cup soft bread crumbs 1/4 cup ketchup 1/2 teaspoon salt 1/8 teaspoon pepper 2 tablespoons butter 1/2 pound sliced mushrooms 6 slices Swiss cheese

    Proceed as follows:

    Mix together the first 7 ingredients. Create a dozen patties, each about a quarter of an inch in thickness. Lightly saute the mushrooms in the butter. Put the sauteed mushrooms on 6 of the patties. Then top with the remaining 6 patties, sealing the edges tightly.

    Broil or grill to desired doneness. Top with cheese. Serve on toasted buns.

    It depends.

    Are you having a salad or a tossed meal?

    Does the salad dressing you’re using have a lot of calories in it, and are you using so much of it on your salad that you have the caloric equivalent of a McDonald’s burger on your salad in dressing alone?

    Many people think that if they are having a salad for lunch or dinner, or even breakfast, that they are having a healthy meal. And yes, a salad can be a very healthy food choice. It can also be just as bad of a food choice as a fast food burger and fries depending on what is put on that salad.

    Here’s an example of a salad a friend of mine who was dieting recently made for herself when we were having lunch at a restaurant with a salad bar. I watched her make a huge salad and this is what it contained:

    Iceberg lettuce

    Shredded carrots

    Tomatoes

    Cucumbers

    Hard boiled egg

    Diced ham

    Diced turkey

    Diced salami

    Bacon bits

    Shredded cheddar cheese

    Shredded Parmesan cheese

    Croutons

    Sunflower Seeds

    Regular ranch dressing,lots of it

    On the side of the salad but on the same plate she piled servings of potato salad, pasta salad, and cottage cheese.

    I think I remembered all the ingredients. I may have forgotten one two, but I’m pretty close to having them all. I remembered her salad because she talked about her diet a lot during lunch and was so proud of herself for not ordering the hamburger she really wanted and instead having the salad. When I pointed out that the hamburger would have been less calories, she laughed at me. I think she thought I was joking but I wasn’t.

    My friend did not have a salad. By the time she finished making her salad it was hard to see the lettuce. She had a tossed meal. And she had several high fat items in that salad like the processed deli meats, the cheddar cheese, and the bacon bits.

    On the other hand, a salad can be a very healthful choice. Some good choices are:

    Dark leafy greens although iceberg is okay too

    Raw vegetables like tomatoes, broccoli, mushrooms, carrots, cauliflower, cucumber, green pepper (or any other color pepper), celery, radishes, and onions

    A low fat or vinaigrette dressing (raspberry vinaigrette has big flavor without having a lot of calories)

    A salad can be whatever you want it to be. But a salad piled high with high calorie and high fat foods in a not the perfect diet food. In fact, what it might be is the perfect diet wrecking food because it fools people into thinking they are eating a low calorie meal when they aren’t.

    This dish is high in vitamin A, a good source of vitamin C, cholesterol free, and almost sodium-free.

    2 ½ cups fresh winter squash, cut into ½ inch slices

    1 ½ cups cooking apples, pared and cut into ½ inch slices

    1-teaspoon nutmeg

    2 teaspoons cinnamon

    Alternate layers of squash and apples in an 8″x 8″ pan, ending with apples on top layer. Sprinkle spices over top layer. Cover pan with aluminum foil and bake in 350 degree F oven for approximately 45-60 minutes until squash is tender. Remove foil and bake another 10-15 minutes to remove any excess liquid that might have accumulated. Cool slightly before serving.

    SERVES: 4.

     CHOP SUEY

    2 cups Elbow macaroni.

    1/2 pound hamburger.

    1 (10 oz) can stewed tomatoes.

    Cook macaroni as directed on package.

    While it is cooking, brown and drain the hamburger.

    Drain macaroni.

    Mix macaroni, hamburger and stewed tomatoes in large pot and heat through.  Serve.

    PINEAPPLE SMOOTHIE

    1 can (14 oz/398 ML) sliced pineapple in juice 

    2 cups (500 ML) plain yogurt 

    1/2-cup (125 ML) skim milk powder 

    1/2 cup (125 ML) ice cubes

    In blender, pineapple and juice, yogurt, skim milk powder, honey, and ice until smooth.

    After every disaster, scammers come out to take your money. Now websites that claim to be legitimate Hurricane Gustav relief organizations have been created. These websites ask people to donate money by giving your financial information.

    They will have official looking URL’S for you to click on like RedCrossrelief.org.  If you click on the supplied link some scammer has your money and financial information.  If you want to make a donation through the Red Cross or another disaster relief organization, type in the URL yourself, like RedCross.org.  Never just click on a link supplied.  Phone, get their URL Address, and type it in yourself.  Better still if you can get to their office, make your donation there.

    VIRUSES, TROJANS

    While on the subject of disasters scammers send out e-mails with pictures attached.

    Never open attachments these often contain viruses, which spy on your computer or can get complete access to your PC.  Unless you know who is sending the attachment and you are expecting it don’t open it till you can check it is your friend who is sending it.

    LIGHTSIDE

    Wives will outsmart you every time. I told my wife “50 years ago we had a cheap suite, no car, a black and white TV, but I got to sleep every night with a hot 23 year old gal.  Now I have a million dollar home, a $80,000.00 car, plasma screen TV, but I am sleeping with a 65 year old woman”.

    My wife is a very reasonable woman. She told me to go out and find a 23 year old hot gal and she would make sure that I once again would be living in a cheap suite, no car, sleep on a sofa bed, and watch the news on a 10 inch black and white TV.    

    THE USES OF FOOD

    To build new tissues (muscle-tissue, bone tissue, and nerve tissue, to repair those issues that are worn out.

    To furnish the body with energy for work and play. (Heat is a form of energy).

    To regulate the body processes; to keep the body in good working order.

    BASE FORMING, ACID-FORMING FOODS.

    Besides grouping our foods under the headings of six foodstuffs, we classify them as base forming and acid forming. These terms do not refer to the taste of food but rather to the use of foods in the body. Foods are acid-forming or base forming according to the ash that is left after they are digested and utilized by the body. The body needs both types of foods so that one counteracts the other, preserving neutrality that is essential for health.

    Base-forming foods are milk, milk-products, fruits, and vegetables, except prunes, plums, cranberries and corn.

    Acid-forming foods are meat, fish, egg, grains, prunes, plums, cranberries, and corn.

    VEGAN

    Vegan: A person that chooses a lifestyle that aims to eliminate the use of products obtained from animals for food, clothing or any other reason.      VEGGIE BURGERS

     You want to try veggie burgers; they are great imitations of the real thing.  Many companies now make them in a variety of tastes and styles. Some mimic meat; others are intentionally grain like. All are lower in calories and fat than a conventional burger and higher in fibre. Many have a respectable amount of protein, too. Their weakness is sodium: The rated burgers have 250 to 500 milligrams. (The recommended daily limit is 2,300 milligrams)

     WATER

    A variety of emergency situations, from floods to earthquakes to toxic spills, could contaminate the local water supply and leave you without access to water. As a result, it’s important to know how to safely store and treat water of uncertain purity during an emergency.

    The best way to treat water is often a combination of methods, as boiling and disinfection will kill most microorganisms but only distillation will remove other contaminants.  Boiling is the safest method of treating water. Keep water at a boil for 10 minutes for maximum effectiveness.

    Disinfection with regular household liquid bleach can also kill microorganisms. Use only liquid bleach that contains 5.25 percent sodium hypochlorite as the active ingredient. DO NOT USE scented bleaches, colour-safe bleaches or bleaches with added cleaners.

    Add one to two drops of bleach per litre of clear water. Stir and let stand for 30 minutes. If the water does not have a slight bleach odour, repeat the dosage and let stand another 15 minutes.

    Distillation involves boiling water and then collecting the vapour that condenses back to water.

    1 ½ ounces orgeat syrup

    ½ ounce limejuice

    Club Soda

    Shake orgeat and lime juice with ice cubes. Strain into fizz

    Glass.  Add ice cubes. Add soda to glass. Serve with straws.

     

    TEA PUNCH

    3 cups brewed strong black tea

    1 quart orange juice

    1-cup lime or lemon juice

    2 cups raspberry syrup

    1 cup crushed pineapple

    2 quarts club soda

    Pour all ingredients except soda over a large block of ice in a punch bowl.  Stir well.  Let it chill.  At serving time, add chilled soda.
